  Split Pea Soup for a Winter's Day

1   large onion, chopped
3-4   large carrots, diced
4   ribs celery, diced
3   cloves garlic, minced
herbs    3 bay leaves, sprigs of rosemary, sage, thyme, marjoram
450g   peas
900g    smoked ham hock
2.8litres    chicken stock

Here's a straight up classic. Green split pea soup with meaty smoked ham hock - makes for a quick and easy festive treat that's guaranteed to warm you up over the Christmas break!

Add oil, onions, carrots and celery to the pan and saute until soft, then add garlic and bay leaves and stir gently for two minutes. Tie the herb sprigs together and add, followed by the peas, then nestle the ham on top. Pour in stock, season with black pepper, bring to the boil and simmer for 2 1/2 hours, stirring occasionally.

To finish, add paprike to taste and drizzle with a little olive oil. Extra tasty when accompanied by crusty bread or oyster crackers.
